External appearance: Uniform and homogeneous conformation.

Appearance when cut: Consistent, marbled, characteristic.

Texture: Homogeneous, slightly fibrous and without pastiness or softening. When pressing the thumb on the fat layer, it sinks easily.

Aroma and taste: Intense aroma, pleasant and balanced. Salty, sweet and bitter at the same time but always very pleasant.

Other formats: Boneless and sliced.
