Appearance when cut: Consistent, marbled, characteristic.

Texture: Homogeneous, slightly fibrous and without pastiness or softening. When pressing the thumb on the fat layer, it sinks easily.

Aroma and taste: Pleasant, characteristic. We can thereby find traces of almonds, smooth and juicy.
